When I was little we used to go to Switzerland to visit family in summer, and remember that fascinated me walk into any supermarket. Before the madness of yoghurts and dairy desserts flooded our stores, there we took centuries ahead with the offer, and my brother and I particularly loved us very popular desserts of chocolate in the Helvetic country. I met by chance with the recipe for this pudding without egg Swiss chocolate and I could not resist.

The same Swiss have adopted the term pudding, and it seems appropriate because it neither is a pudding nor is they custards. At least they are not because they do not carry egg, at least as I understand it. It is simply a creamy dairy dessert very easy to prepare that will richer the better the quality of chocolate, if possible Swiss – okay, is not entirely necessary-. You can adjust the sweet to the taste point, I prefer not to be too gooey and enjoy the taste of cocoa creamy tablespoons format.

Ingredients for about 6 servings

  • 50 g of good black chocolate swiss, 500 ml of milk (whole, low-fat, vegetable or lactose), 1 small pinch of salt, 1 teaspoon vanilla sugar, 1 pinch ground cinnamon, 35 g sugar, 2 tablespoons cocoa pure powdered sugar, 30 g of corn starch, chopped or grated white chocolate to decorate.

How to make chocolate pudding without egg Swiss

Chop the chocolate. Separate 150 ml of milk and freeze. Place the remainder in a saucepan, warm with vanilla sugar and salt and add the chocolate. Stir until melted and put out the fire. Remove the milk remaining in the freezer (must not be frozen, just very cold) and add the cornstarch, sugar, cocoa and cinnamon.

Stir well with a whisk until it has incorporated all smooth. Pour over the warm saucepan and reheat over medium heat. Stir constantly with the rods until thickened, being careful not to burn below. Cover with a cloth or plastic film while cooling slightly.

When it is no longer hot, stir again with the rods and hand in containers of desired size, it gives to about 6 servings 4 medium or larger size. Cover with plastic film to keep the exterior is smooth, although it is not necessary. Carry the refrigerator until cool and decorate with white chocolate.
