Yes, it also gives me some allergy to see window displays filled with hearts and overdose of pastel colors, but my way of celebrating Valentine’s Day is more practical. That is, it becomes an excuse to give us some new sweet treat at home, preferably I chocolaty. It is always nice to share a sweet as these vegan chocolate cupcakes and orange, much better if they also share the same blanket on the couch in these cold days.

I adapted a little the original recipe, which comes from a book of 1929. Then doubt very much interested to offer lighter alternatives to sweets or vegans always rather should be seen as a recipe for economic and simple cake, because it does not contain butter or oil or eggs. I have used soymilk but you can use any milk or vegetable drink you have at home. If you are very sweet, increase the amount of sugar up to about 225-250g.

Ingredients for about 8 units

  • 170 g of baking powder, 30 g ground hazelnuts, 2 teaspoons chemical yeast, 1 teaspoon vanilla sugar, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, 55 g pure cocoa powder without sugar, 50 g 120 g of sugar, 1 orange, 250 ml of vegetable drink to taste (or milk if it is not vegan).

How to Make Vegan Chocolate and Orange Cupcakes

Preheat oven to 180C and grease 8 individual molds, muffin type, or prepare a large cast of about 20-22 cm in diameter.

Dispose in a bowl the baking powder, ground hazelnuts, chemical yeast, vanilla sugar, salt and cinnamon. Mix well with a whisk and sift over the cocoa pure powder. Grate the skin of the washed orange and add the two types of sugar. Also take milk and mix just enough to have a wet mass without lumps.

Divide into the molds and bake for about 20 minutes, until punched with a toothpick comes out clean. Let cool on a wire rack and serve with icing sugar sieve or a chocolate topping, if you fancy.

Tasting

I like to serve these cupcakes vegan chocolate and orange with fresh fruit, preferably red, as we are with the excuse of San Valentine. For example, raspberries, currants or strawberries, and if there is in the fridge, whipping cream or a good yogurt. With hot melted black chocolate sauce, they are also great.
